This is one of the best wines that Deep Woods Estate makes. It's the one that I cellar for special occasions and also drink on a Tuesday with pizza.
Julian Langworthy, Chief Winemaker
Deep crimson with purple hues.
Brimming with aromas of dark fruits, chocolate and bay leaf.
Full and rich with notes of dark chocolate, liquorice and cassis. Ripe tannin abounds the palate and provides both structure and length.
This wine may be enjoyed on release but will find further complexity over 3–4 years from vintage.
The 2018 growing season was outstanding, resulting in an excellent vintage. A warm, yet very even and long growing season resulted in wines with amazing concentration of flavour.
Cabernet Sauvignon and Merlot were crushed in static fermenters. Pump-overs and delestage (rack and return) were used to extract fine tannin and colour. After 12–16 days, depending on the fruit, parcels were then pressed off before completing primary ferment in a tank. The wine was then racked into tight grain, thin stave Bordelaise French oak barriques, 25% of which were new, for 18 months.

As per usual for the Deep Woods team, this is a dence, intensely vibrant and cracking cabernet merlot. Never doubt them, for they are doing brilliant things. Screw cap.94
