2023 Reserve Cabernet Sauvignon
Tasting Notes
Colour
Deep redcurrant and mulberry hue.
Aroma
Immediate aromas of red florals, cherry wood, cedar and intense currant are supported by cassis, bay leaf and brine.
Palate
The palate has a preserved power and poise. A seamless and compact tannin profile waits to unfold in time but for now very saline and youthful. Flavours of Dutch cacao powder, tobacco and complex spice meet sweet fruit notes to present a very fine Cabernet with balance and class.
Cellaring
Optimum drinking from five to ten years from vintage, however this wine will cellar for the long-term collector.
Technical
Vintage
2023 saw a mild spring with adequate soil moisture, resulting in a slightly later season. A moderate summer led to ideal ripening conditions with little pressure in the vineyard and a lack of any major rain events during the ripening season. Consistently warm days and cool evenings made for great retention of acid within the grapes, whilst achieving optimal fruit expression.
Winemaking
This Cabernet Sauvignon was crafted from the ultra-low yielding, original vines on the estate planted in 1987, along with fruit from our neighbouring Abbey Vale vineyard planted in 1985. The ferments were assessed daily, and pump-overs were performed as required to gently extract colour, flavour and tannin. The wine was gently pressed to a combination of new and seasoned French barriques, where it matured in oak for 18 months.
