Cooler-than-average temperatures and plenty of rain right up until just a few weeks before harvest, led to calm, sunny weather at just the right time. 2021 produced fruit of pristine flavours and high natural acidity. One of the great seasons in Tasmania,
winemaking
Fermented at cooler temperatures in stainless steel tank with a range of carefully selected yeast strains renowned for delivering rich, spicy Pinot Gris characters. A small portion was fermented in old French oak and blended back to add depth and complexity.
