This is highly savoury with some quince paste, lemon curd, a whiff of white pepper and a lick of phenolics adding a textural element. Refreshing and dry yet best with food.

Really pale and youthful in the glass. Aromas of citrus rind, white flowers and a green, woodsy edge. Textured, bright and snappy on the palate, with grapefruit, just-ripe nectarine and wheat puff. There's also a savoury, saline zip at the end.
