I love being able to take the Fiano grapes in a style direction of my choosing. Light and fruity, or richer and textured. Finding that sweet spot is important, and the Millbrook style lays somewhere in between, a bright, fresh, fruit driven wine with subtle texture to add interest and suitability for great food pairings.

Brilliant pale lemon.

Lifted lemon blossom perfume, with notes of fresh cut green apple, spice and flint.
palate
This is a generous, fruit laden expression of Fiano, with a moreish acidity and elegant saline minerality. Brimming with pear and green melon notes with a twist of fresh lemon juice acidity, the palate is lengthened by subtle lees texture.

Technical
vintage
Margaret River had the driest and warmest growing season on record, with very little spring rain and none through to March. These conditions meant next to no disease pressure, with an incredible display of Marri blossom removing bird pressure. A historically early harvest brought marginally lower than average yields. Careful vineyard management and a meticulous picking schedule has helped to produce powerfully flavoured wines with vibrant natural acidity.
winemaking
This select parcel of Margaret River Fiano was harvested in the cool night and the fruit was gently pressed. The pure free-run juice was fermented in a stainless-steel vessel at cool temperatures to retain freshness, with a select yeast strain chosen to enhance the varietal expression of this Southern Italian variety. A portion of the more textural Fiano juice underwent fermentation in seasoned French oak barrels to add complexity and texture to the final blend.
