Wild Cape is a celebration of the raw beauty of Western Australia’s South West and is inspired by the spectacular coastline and distinct regional characteristics of Margaret River wine.
Through photographer Andrew Semark’s epic and dramatic photography, Wild Cape embodies the essence of the region where dramatic waves crash into the cape and world-class wines are produced in this remote, pristine part of the world.
The photo that represents Wild Cape Sauvignon Blanc is called ‘Void’. Photographer Andrew describes the captured wave succinctly as “force, rare and relentless”. The same could also be said of Margaret River Sauvignon Blanc – a relentless wave of flavour showcasing the unique varietal characteristics of this region, which Senior Winemaker Matt Byrne labels as “purity and energy – Sauvignon Blanc in all its glory”.
Tasting Notes
colour
Light and vibrant with a youthful lime green tint.
aroma
A super bright and lifted nose with layer upon layer of seductive, juicy Sauvignon Blanc aromas. Lime leaf, fig, lychee and mango skin, overlaid with elegant notes of cut grass, lime zest and white flower.
palate
Flavoursome, long and delicious with a salivating, refreshing acidity bursting with lychee, lime cordial and tropical fruits. A crunchy, textural element from 6 hours of skin contact maceration has created a layered and complex wine.
cellaring
Best enjoyed within the next one to two years for maximum freshness.
Technical
vintage
We had a mild spring with adequate soil moisture, resulting in a slightly later season. A moderate summer led to ideal ripening conditions with little pressure in the vineyard and a lack of any major rain events during the ripening season. Consistently warm days and cool evenings made for great retention of acid within the grapes, whilst achieving optimal fruit expression.
winemaking
The fruit for this wine comes from our vineyard in Karridale, from a specific block identified for its intensity of flavour and great acidity retention. The fruit was picked at 11.9 Baume in the early hours of the morning to keep the fruit cool. It was then crushed to press where we allowed it to macerate on skins for 6 hours to impart an extra level of complexity and texture.
The fruit was then pressed though with no pressings cut before being settled and racked off heavy lees. The juice was then co fermented with two different yeasts, one that promotes thiols and the other promoting fruity varietal aromas.

Fruit is sourced from Karridale. Pungent passionfruit and apple blossom, white nectarine and pineapple rings. The wine is jam packed with vibrant fruit and a dry linear finish. A creamy tropical yogurt hint with green grapes and golden kiwi flesh. Drink now with ribbons of cucumber, basil and fresh ghost cheese salad.
