The quintessential expression of Cabernet Sauvignon from Margaret River. Cassis and plum flavours drive through the palate intertwined with a lovely violet floral lift and a twist of savoury bay leaf and wild herbs.

Drinking beautifully on release, but will continue to develop over the next five to eight years.

In short, the 2018 vintage in Margaret River was extraordinarily good and one that winemakers always hope for.
A prolonged cool and wet growing season led to later maturity and, therefore, later harvest dates for many varieties. This allowed the Cabernet Sauvignon fruit to accumulate great intensity of colour and flavour, with lovely aromatics and superb tannin ripeness.
winemaking
The fruit was picked in the early morning prior to dawn and brought to the winery to be cold soaked in a fermenter for 4 days at 10C. It was then allowed to undergo fermentation on skins for 10 days for a total of 14 days on skins. The must was thoroughly aerated 3-5 times daily throughout fermentation and kept at 22-24C before being pressed off skins to barrel. The wine was matured for 11 months in a combination of new (8%) and old French oak barriques (225L) and hogsheads (300L) before being taken out of barrel and bottled.
