A rich bold plum and mulberry scent with hint of licorice and the fragrant notes of rose petals provides a refreshing floral lift. Delicate earthy aromas, savoury spices and fresh cedar from barrel maturation contributes intriguing complexities.
palate
Fresh, elegant and long with the rich, pure flavours of the Shiraz varietal filling the mouth. Fine, powdery tannins and with a silky mid-palate are a feature of the style with the resultant wine showing great balance and texture.
Technical
vintage
A prolonged cool and wet growing season meant that the vines were lush and healthy heading into ripening. The coolest and wettest February and March conditions experienced in Margaret River for more than 15 years meant that harvesting occurred later than usual. April really saved the vintage, with dry conditions allowing the grapes to accumulate flavour and tannin ripeness.
winemaking
Following a careful harvest, the fruit was de-stemmed and cold soaked in the fermenter to produce a fruit driven, aromatic wine with a lush, soft texture. The must is then warmed and inoculated with a yeast strain, selected to enhance the spicy varietal characters of Shiraz. The fermentation was conducted at a cool 20-22 degrees to encourage aromatic retention and to maximise colour intensity. During fermentation, each batch was thoroughly aerated to help produce a fine fleshy texture in the end wine. After 12-14 months maturation in American and French oak barriques, the wine was lightly fined and filtered only once prior to bottling.
