Technical
vintage
We had a mild spring with adequate soil moisture, resulting in a slightly later season. A moderate summer led to ideal ripening conditions with little pressure in the vineyard and a lack of any major rain events during the ripening season. Consistently warm days and cool evenings made for great retention of acid within the grapes, whilst achieving optimal fruit expression.
winemaking
This wine is produced solely from Margaret River fruit and made to sit alongside the very best wines from the Deep Woods stable. The aim was to make a contemporary style of Rosé; nuanced and delicate, yet still full-flavoured.
Sangiovese (69%), Merlot (20%) and Tempranillo (11%) make up the core of the wine, all largely grown in the Yallingup Hills. The Sangiovese and Merlot parcels were fermented separately on light lees in stainless steel, then matured for a further two months prior to clarification. The Tempranillo was hand-picked and underwent wild fermentation in old French oak puncheons and remained there for three months prior to blending.
