White flowers, nectarine and lemon peel aromas with warm toasty almond biscuit.
palate
This wine displays juicy white peach flavours with an underlying citrus freshness. This is a medium bodied Chardonnay with vibrant notes of candied lime peel and rich roasted cashews.
cellaring
This wine may be enjoyed on release but will find further complexity with two to three of years ageing.
Technical
vintage
We had a mild spring with adequate soil moisture, resulting in a slightly later season. A moderate summer led to ideal ripening conditions with little pressure in the vineyard and a lack of any major rain events during the ripening season. Consistently warm days and cool evenings made for great retention of acid within the grapes, whilst achieving optimal fruit expression.
winemaking
Fruit was sourced from across the Margaret River region for this delightfully complex yet eminently drinkable wine. Fermentation was carried out using wild yeast and the wine was left to mature on lees for six months in new and seasoned French oak imparting great texture and length.

Just a little barrel fermentation has transformed this from the normal fruit-bomb style into a wine of sophistication and style, while still allowing the punchy savvy fruit to display its virtues. Typical characters of passionfruit, gooseberry and a little snow pea are lifted with a little of the lemony oak influence. A really attractive wine to drink while it is still fresh, but which can handle a little cellaring time.

Like most of Deep Woods wines the variety is the star of the show. Here chardonnay is embraced like a warm hug. It's filled with yellow peach, fresh apricot and lemon balm. Jackfruit and papaya. It's pulpy and fleshy on the palate with a foundation of cedar oak. Nutmeg, cinnamon and cultured butter. A Werther's original cream candy deliciousness. Richly satisfying but perked up by fresh acidity. It's a smart wine, almost smugly so. for the price it can be. Drink now and will cellar for another 3 years. Drink with an excellent croque monsieur.

A remarkably sophisticated Chardonnay in this price category. Aromas of light citrussy stone fruit with a little grapefruit influence. This is a medium weight wine with excellent fruit intensity and life from this super vintage. The oak influence is subdued and perfectly weighted for the fruit with just a faint new oak seasoning adding lift. Nice, precise wine, ideal over the next few years.
