Deep crimson with vivid purple hues.

aroma

This wine exhibits aromas of cassis, blueberry and violets with hints of savoury spice.

palate

The palate is bold, bright and fruit driven, bursting with plum jam, cassis and dark berries. It is full-bodied with ample chewy tannins deliciously reminiscent of dark chocolate. A true representation of Margaret River Cabernet Sauvignon. 

cellaring

This wine will continue to improve with careful cellaring for at least eight years from vintage.

Technical

vintage

The 2021 vintage in Margaret River produced very fine, refined wines. It was cool and wet in parts, with the best Cabernet vineyards producing distinctly medium-bodied wines with great poise and silky tannins.

winemaking

The Hillside Cabernet Sauvignon is a unique expression of the Margaret River wine region – one of the best Cabernet producing areas in the world.

The fruit for this wine was sourced largely from vineyards located on the Deep Woods Estate in Yallingup. These vines are just coming of age and showing great intensity and verve. The wine underwent 10-14 days of skin contact during fermentation and was then pressed directly to barrel and aged for around 12 months. The barrels consisted of 15% new oak and 85% seasoned oak.

A ripper red, especially for the price, and it’s not all about fruit as there’s spice, warm earth and cocoa, too. The lighter-framed palate fills out with fine tannins. Not overly complex but has drinkability writ large.
