Colour
Mid-straw/gold with a touch of vibrant green gold rim.

Ripe, soft Chardonnay characters of peach, tinned pears and melon.
Palate
Toasty oak, roasted spices and alluring creamy, buttery notes that fill the nose and mouth.
Cellaring
Drinking beautifully now, but will reward careful cellaring for 12–18 months.

Winemaking
A selection of our special vineyards that produce Chardonnay fruit with succulent peach, nectarine and ripe pear flavours grow the fruit for our much loved and wildly unique Butterball Chardonnay wine. These intense flavours are matched with lower acid levels from the wine undergoing 100% malo-lactic fermentation to full completion which also imparts the much loved buttery notes of Butterball.
All juice was fermented on light to mid-range solids (think hazy IPA beer) using a combination of wild fermentation and the Burgundy Yeast CY3079 which is renowned for producing textured, high quality Chardonnay wines. Fermentation was conducted in a combination of French oak (~20% new) and stainless steel tank.
Following both fermentations, the wine was matured on yeast lees for 8 months and stirred fortnightly to keep it in suspension which imparted further texture, integration and complexity to the final wine. After this maturation period, the wine was blended and bottled under screwcap with minimal SO2 to maximise the intensity of the alluring buttery characters expected of Butterball.
