Vintage
The 2024 vintage in Margaret River commenced very early due to the prolonged 7 month period of warmer and drier than average months that commenced in Spring (Oct) 2023 and continued throughout the entire Summer and into mid-Autumn (April) 2024.
Winemaking
Following harvest in the coolest part of the night, the grapes were then gently pressed with the juice then being cold settled in tank at 10°C for 2 days. The clear juice was racked off and warmed to 17°C and inoculated with yeast to begin fermentation. During fermentation, cool temperature were utilised to encourage aroma production, texture and overall varietal character. On completion of fermentation, all batches were lightly sulphured, chilled to 0°C and clarified to avoid extended contact on yeast lees. The Semillon and Sauvignon Blanc parcels were then blended before being stabilised and filtered only once to produce a bottle ready wine. This simple and uncomplicated winemaking has retained and showcased the attractive primary fruit flavours and aromas so much loved in our whites wines.
