This wine exhibits lush nectarine, grapefruit and white peach characters. A hint of warm vanilla spice from oak ageing frames the nose.
palate
The palate is clean and lively with tremendous depth of ripe stone-fruit flavour nuanced by toasty almond-meal notes. Bright citrus acidity and orange peel provide length and vibrancy to the finish.
cellaring
This wine may be enjoyed on release but will find further complexity three to four years from vintage.Â
Technical
vintage
We had a mild spring with adequate soil moisture, resulting in a slightly later season. A moderate summer led to ideal ripening conditions with little pressure in the vineyard and a lack of any major rain events during the ripening season. Consistently warm days and cool evenings made for great retention of acid within the grapes, whilst achieving optimal fruit expression.
winemaking
The Hillside Chardonnay focuses on a selection of some of the coolest sites in the Margaret River region, producing a wine with great varietal character, while maintaining excellent vibrancy and freshness of acidity.
This wine was fermented in a combination of seasoned and new oak barrels, using only indigenous yeasts for wild fermentation. With minimal fining and no acid additions, this Chardonnay showcases Deep Woods’ dedication to site selection and pure varietal expression.
