A medium- to full-bodied wine filled with flavours of red berries and plums with underlying spice from the oak. Approachable tannins add length and characteristic regional structure.
Ready to enjoy on release but will find further complexity over the first five years from vintage.
Ebony is a classic Australian blend of Cabernet Sauvignon and Shiraz produced from both select growers and Deep Woods Estate-grown fruit. The 2019 vintage was atypically cool, leading to wines with pristine natural acidity and clean, bright flavours. Reduced yields as a result of the season led to wines with lifted aromatics and concentrated flavour profiles.
The two varieties were handled separately throughout the winery with a range of winemaking techniques used, such as open-top fermentation, pre-soaking and post-fermentation maceration. The philosophy behind Ebony is simple: fruit richness, flavour and soft approachable tannin.

A consistent value-for-money offering from one of the best producers in Margaret River. A slightly leaner style to previous vintages, the result of this cooler vintage. Still, the fruit weight balance and all thing nice are in place to make for excellent current drinking.
