Picked at 20 Baume, with some raisin fruit, from select, highly mature Australian vineyards primarily in the Rutherglen area.
The must was allowed to partially ferment for 5 Days using a high sugar resistant yeast strain before fortification occurs on skins, to halt the fermentation and retain a high level of natural sweetness.
The wine is then pressed and settled before being moved to small, seasoned oak barrels for maturation.
The average age of the blend is approximately 20 years.
