The 2016 year continued the extremely good run of vintages in the world-renowned Margaret River Wine Region. A dry, warm January was punctuated with a late rainfall pattern that reinvigorated canopies throughout the vineyards. Picking commenced in mid-February, almost two weeks later than the previous vintage. The aromatic variety of Sauvignon Blanc exhibits the fresh acidity and trademark fruit purity that is a hallmark of the region.
The wine is a delicate blend of estate-grown Sauvignon Blanc and fruit from selected southern Margaret River growers. Various techniques were employed in the production, including a small percentage of barrel fermentation and judicious lees stirring, all of which enhanced the wine’s textural qualities and complexity.
Margaret River 100%
Sauvignon Blanc 100%
Prawn Som Tum.
Incorporates a small percentage of barrel ferment and lees stirring. This is an exceptionally vigorous and complex wine with a banner headline to both the bouquet and palate of passionfruit and citrus. The superabundant flavours deal with the extremely high natural acidity of 9g/l. This is irresistible.95
