The 2021 vintage in the Geographe region was quite warm with some rain events through the late Summer and early Autumn. Although the Vermentino sat through one of these rain events this variety was not affected. The fruit was able to ripen to full maturity allowing for a fuller flavour profile to develop. The fruit for this wine was sourced from a single vineyard within the Geographe region, which is quickly becoming known for producing some excellent examples of this North-West Italian variety.
The fruit was hand-picked in the cool of the early morning for processing. Fruit was then destemmed, crushed and gently pressed to allow for extraction of clear, free run juice. This clean, clear juice was racked from the solids and fermented with a specifically chosen yeast strain at cool temperatures to retain the subtle aromatics of this wine. Lightly fined and filtered for clarity before being bottled in May 2021.
