Technical
winemaking
100% whole bunch pressed to new and used French oak puncheons. Wild fermented the sulphured after primary fermentation to avoid malolactic fermentation. Aged on gross lees for up to 8 months before being getting ready for bottle.

Fruit from the Perth Hills. Whole-bunch pressed to new and used French oak puncheons. Wild ferment, mlf blocked. Aged on gross lees for 8 months prior to bottling. Viognier is one of the key varieties for Millbrook and it's got a good reputation. It has all the Turkish apricot, red apple, orchard blossom, frangipani and honeysuckle characters that we associate with viognier, but it also has a mineral seam of acidity that scrapes through the wine, keeping things fresh and lively. It's a beautiful wine, again.

Viognier really is the cornerstone variety at Millbrook, nestled in Jarrahdale in Perth's HIlls. Sweet spiced apple, ginger, pepper, mandarin pith, summer apricot and jasmine tea. The palate is fat, slippery and oily, with apricot marmalade and cloudy apple juice in equal measure. The length of flavour is very good, however the intensity of florals and ripe orchard fruit mean this will likely be consumed within 5 years of release - and that will be ok. Because it is delicious.

This excellent viognier comes from Millbrook’s oldest plantings in the Perth Hills. It’s a more restrained and elegantly expressive wine than previous vintages, showing a new direction for this variety from Millbrook. Spicy with gingery apricot aromas and a minerally orange blossom combo happening on the palate.
