Technical
winemaking
100% whole bunch pressed to new and used French oak puncheons. Wild fermented the sulphured after primary fermentation to avoid malolactic fermentation. Aged on gross lees for up to 8 months before being getting ready for bottle.

Viognier really is the cornerstone variety at Millbrook, nestled in Jarrahdale in Perth's HIlls. Sweet spiced apple, ginger, pepper, mandarin pith, summer apricot and jasmine tea. The palate is fat, slippery and oily, with apricot marmalade and cloudy apple juice in equal measure. The length of flavour is very good, however the intensity of florals and ripe orchard fruit mean this will likely be consumed within 5 years of release - and that will be ok. Because it is delicious.

Rich and unctuous Viognier - world-class!
What a drop! Fruit from the Millbrook Estate, some oak ageing and a rich, fat expression of Viognier - in all the best ways! Better then most Chardys!
