Lifted lemon, pear and green apple skin with lovely floral, spice and honey notes.
A dry, crisp and clean expression of Fiano, showing pear and green apple notes with a twist of fresh lemon zest. The wine is beautifully textural with good length on the palate and an interesting, almost saline edge.

The warmer start the year meant that the white grapes were able to ripen early, this was one of the earliest picks we have seen at Millbrook. The season cooled off towards Autumn which gave the red grapes time for the tannins to ripen with enhanced varietal characters while maintaining natural acid.
This select parcel of Margaret River Fiano was harvested in the cool night and transported to Millbrook in the early hours of the morning. The fruit was gently pressed taking only the pure free-run juice, before racking from any solids. Fermentation was carried out at cool temperatures in stainless steel to retain freshness, with a select yeast strain chosen to enhance the varietal expression of this Southern Italian variety. This wine underwent membrane filtration prior to being bottled.

Not unsurprisingly for an Italian variety, this is a beautiful match with a variety of pasta dishes, especially those with a cream or cheese-based sauce. Try with spaghetti carbonara.
