The palate is bold, bright and fruit driven, bursting with plum jam, cassis and dark berries. It is full-bodied with ample chewy tannins deliciously reminiscent of dark chocolate. A true representation of Margaret River Cabernet Sauvignon.

This wine will continue to improve with careful cellaring for at least eight years from vintage.

vintage
The 2020 vintage featured a growing season with a warm, dry summer providing the perfect conditions for hallmark flavour intensity. Cool evenings ensured fruit retained natural acidity, producing wines that are expressive and beautifully balanced.
winemaking
The Hillside Cabernet Sauvignon is a unique expression of the Margaret River wine region – one of the best Cabernet producing areas in the world.
The fruit for this wine was sourced largely from vineyards on the original Deepwoods vineyards in Yallingup. These vines are just coming of age and showing great intensity and verve. The wine underwent 10-14 days of skin contact during fermentation and was then pressed directly to barrel to complete fermentation to dryness and aged for around 12 months. The barrels consisted of 15% new oak and 85% seasoned oak.

Fruit from the Deep Woods vineyard in Yallingup (in the north). Up to 14 days on skins, seperate batches are sent straight to barrel for maturation in French oak (15% new). $25, and you know it's going to be good. Fine, shapely, powdery tannins (slightly chewy, too) back up the concentrated, ripe, red and black berry fruit. With a sprinkling of ground star anise, peppercorns and laced together with briny acidity, this is a cracking little wine. Super-smart.

Deep, youthful and dark colour in the glass. Brambly black fruit aromas, mulberry, tobacco, menthol and dried herbs. Powerful, yet balanced on the palate, lashings of blackberry, blackcurrant, a touch of mint and grippy, granular tannins. Impressive mouth-feel, firm, savoury and long. Real value here.
