A medium bodied wine bursting with juicy blackberries, cassis, prunes and ripe Damson plums. There is layer of warm mocha spice from oak ageing and soft, firm tannins add a savoury finish and characteristic regional structure.

This wine is ready to enjoy on release but will find further complexity over the next five years.
Technical
vintage
The 2020 vintage was a brilliant season in Margaret River. A warm and dry season with below-average crop yield allowed for perfect tannin development and an incredible intensity of flavour. The resulting 2020 wines show amazing brightness and clarity, intense and charming fruit character and a youthful exuberance, which ensure enjoyment as both young and older wines.
winemaking
The Shiraz and Cabernet Sauvignon were handled separately during winemaking with a range of techniques used, such as open-top fermentation for aeration, pre-fermentation cold soaking for improved colour and tannin extraction as well as post-fermentation maceration on skins. The two varietals were blended after maturation. The philosophy behind Ebony is purity; showcasing fruit richness, flavour and smooth, approachable tannins.

Either Julian Langworthy is blessed with messiah-like water into wine abilities or Deep Woods chooses to use high quality fruit and over-deliver with this range. I assume the latter. Punchy, ripe and spicy black fruit sets the tone. Blackcurrant pastille, pepper and plum jam linger. Plump juicy tannins finish the palate. Made for early drinking and can be enjoyed over the next 3 years.
