The grapes were whole bunch pressed, without settling, directly to French barriques, 40% of which were new and 60% of which were one year old. The wine underwent wild fermentation and spent 8 months on lees. After fermentation, the barrels were topped and stirred only once before being lightly fined and bottled in December 2019.
