Very pale straw with a brilliant green hue.
Aromas of citrus blossom, kaffir lime leaf and roasted almonds.
Finely textured with vibrant, juicy acidity creating a wine of impressive length and detail. Powerful and beautifully poised, showing layers of white nectarine, tahitian lime and savoury oak-driven complexities.
This wine may be enjoyed on release but will find further complexity over three to six years from vintage.
2019 was a beautiful vintage in Margaret River. A steady, mild season allowed for slow, measured flavour development that resulted in balanced natural acidity and lifted varietal fruit character, resulting in wines with incredible perfume, true elegance and real personality.
The grapes were hand-picked then left overnight in a cool room set to zero degrees. The following day, the fruit was whole bunch pressed, with minimal spins, on a long cycle, to avoid unwanted, ‘tougher’ phenolics. The juice was then moved straight to oak for wild ferment in both puncheons and hogsheads, 35% of which were new. The wine did not undergo any malolactic fermentation. Battonage was used sparingly and frequency was dependent on the individual parcel of wine.
