Primary fruit aromas of blackberries and plums are complimented by subtle cinnamon and black pepper spices.
The primary fruit flavours of plums and red berries provide vibrancy and flesh to the wine, and are well supported by seasoned French oak. The tannins are soft, round and persistent, creating complexity as well as adding freshness and balance.
This wine is ready for drinking now, but will find further complexity over the next two to three years.
The 2019 vintage was characterised by a cool, dry and long growing season, resulting in wines with elegance and beauty, ripeness of tannin and great depth of flavour.
Shiraz and Malbec parcels were crushed to static fermenters. Pumpovers and delestage (drain and return) were used to extract fine tannin and colour. After 12 - 14 days, where fruit flavour and tannin extraction were optimized, the separate fermentations were pressed to complete primary fermentation in tanks. The wines were then racked into French oak barrels for 12-15 months of maturation, before blending.
