We specifically selected a 30-year-old vineyard located in the Frankland River subregion of the Great Southern region for this Single Vineyard wine because of its high quality, cool-climate fruit. This region specialises in Shiraz that has a peppery, spice and red fruited backbone that can only be found in Frankland River.
Perfectly ripe fruit was harvested and delivered to the winery during the cool of the night. The fruit was destemmed and transferred to open-top fermenters where it was hand-plunged twice daily for ten days for gentle extraction of tannins. Temperatures were kept cool to retain the beautiful aromatics of the Great Southern region. The wine was then pressed to new (30%) and seasoned French oak puncheons and matured for 12 months before being lightly filtered and bottled.
