The 2018 vintage was moderate, mild and a wonderful year for Sauvignon Blanc in Margaret River. Rainfall in early January renewed canopies across the region and resulted in beautifully ripe, varietally pure wines that are brimming with perfect, delicate, natural acidity.
This parcel of Sauvignon Blanc was specifically selected in order to retain the freshness and vibrancy for which Millbrook is well known. The fruit was harvested in the cool of the night and transported to the winery for early morning processing. Gentle pressing, soft racking and the use of an aromatic yeast strain ensured freshness and varietal expression. This wine underwent minimal fining and filtration before being bottled.
Western Australian Dhufish, chilled mango and cannellini beans.
Water white; passionfruit and citrus join forces with a neat flow of acidity to provide balance and length.
Quite herbal on the nose with grass and currant bush, but some good citrus character, too. Fruity and direct on the medium-boded palate.90
