This wine achieves the difficult balance of providing a wonderfully complex chardonnay drinking experience without sacrificing fruit freshness and vitality. As a result, this expertly made wine will be just as rewarding to lay down as its red counterparts. It will very slowly develop more subtle complexities and character for years to come whilst ensuring fruit and hence regional character is the focal point of the Redbrook Reserve style.
Light straw with a vibrant green rim. Incredible youthful condition for its vintage.
The wine shows malt, fresh toast and struck match complexity from wild barrel fermentation
The palate is seamless, refreshing and tight with ever lingering flavour that is a highlight of the excellent 2017 Margaret River vintage.
Although beautiful now, will continue to develop complexity for at least ten years from vintage.
A prolonged cool and wet growing season meant the vines were lush and healthy heading into ripening. This resulted in later harvest dates, accentuated by the cool and wet ripening months; conditions not experienced in Western Australia for more than 10 years. These conditions, coupled with the absence of heat events, produced highly aromatic whites with good natural acidity.
100% Gin Gin Clone. At perfect ripeness, the fruit was hand-picked in the early hours of the morning. Whole bunch pressed at 5-10C. The gently pressed juice was stirred every six weeks with 100% wild yeast on full solids before ten months on yeast lees in tank. No malolactic fermentation occurred.
The wine was the aged in a combination of 90% one-year-old and 10% new oak barrels. Bottled in January 2016 before being left for maturation in bottle for a year.
Fried lemon & almond coated King George Whiting with crab salad.
Fermented wild, no mlf, 11 months in oak (only 13% new) before spending a further 12 months in tank on lees prior to bottling. It puts on a clean pure display but then it also has excellent intensity and length. Apple, white peach, pear and cedar wood flavours are presented crisp-but-creamy, the result as delicious as it is impressive. To 2027.
