vintage

This wine is partially comprised of fruit from one of the oldest blocks of Shiraz on the estate. Block 7 is primarily dry-grown, planted in 1987 and sits on deep, sandy gravels.

2016 represented yet another stellar year for Shiraz in the Yallingup Hills. A steady and warm growing season was punctuated by late rainfall that reinvigorated the vines.

winemaking

A true favourite of the Deep Woods’ winemaking team. Each batch of fruit was handled individually from picking through to the final blend being chosen.

Techniques of whole bunch fermentation and cold soaking were used to varying degrees depending on the batch and a combination of open and static fermenters were used. Maturation was in tight-grained François Frères Burgundian oak for an average of 14 months at which time only the very best barrels were chosen for the finished wine.
