Bright crimson with vibrant purple hues.
The wine exhibits ripe red fruits and salted licorice aromas. High notes of bay leaf and violet add further complexity and frame this wine’s minerality.
The palate unfolds in a myriad of layers of red fruit with subtle undertones of graphite. The wine shows silky, fine, dry tannins with exceptional length.
This finely structured Margaret River wine will continue to improve over the five to seven years following vintage.
This wine has been crafted utilising fruit sourced from three separate blocks on the Yallingup Hills estate: Blocks 3 and 4, two premium blocks of 25-year-old Cabernet Sauvignon vines and Block 5 Merlot; the latter block being planted in 1987. A small amount of Cabernet and Malbec from the neighbouring property of Abbey Vale, also in the heart of the Yallingup sub-region, features in the 2016 blend.
All of the constituent vineyard parcels were fermented separately, using a variety of techniques. The individual parcels were matured for 12 months in 30% new and 70% seasoned French oak barriques. From these parcels we have strived to blend a wine that has great depth and intensity of fruit and speaks strongly of the premium Cabernet program at Deep Woods Estate.
Parcels of cabernet sauvignon and merlot were separately vinified and matured in new and used French oak, which is still to knit fully with the fruit, The fruit is of good quality and will prevail given time. To 2031.
Rich, savoury and very youthful with intense dark minty fruit aromas. Soft and silky smooth in the mouth with drying tannins. 4 stars
A soft and generous core of mulberry and blackcurrent-like varietal fruit characteristics with herbaceous elements, cedary oak adding complexity and a nice level of tannins. 4.5 stars
