"The Millbrook Estate vineyard in the Perth Hills is a special site, in that the ripening of Shiraz and Viognier invariably occurs at the same time, allowing for the co-fermentation of the two varieties for this flagship Estate Shiraz Viognier. It's on the menu in the Millbrook restaurant with grass-fed lamb."

Purple with deep, ruby hues. 

aroma

The wine reveals a wonderful array of red and black fruit, coupled with an undertone of violet and rich spice. 

palate

A medium- to full-bodied wine filled with flavours of blood plum and blackberry. The intense fruit is finely balanced with an elegant and persistent finish. 

cellaring

This wine has the potential to age for ten or more years from vintage.

vintage 

The vines on the estate were planted in 1996 on a shallow, lateritic gravel ridge, with a south-west aspect. The 2015 growing sseason was both warm and dry which allowed for optimum ripeness in Shiraz.

winemaking

Shiraz fruit was handpicked, de-stemmed and transferred into open-top fermenters where whole bunches of Viogner were added. After ferment began, the wine was hand-plunged twice daily and temperatures were kept below 30 °C. The wine was aged in a combination of new and seasoned French oak barriques and aged for an average of 16 months before being bottled in December 2016.

Hand-picked, destemmed, fermented with 3% whole bunch viognier, 10 days on skins, matured in French barriques (40% new) for 16 months. Has retained good hue; the Perth Hills is a warm region, so the amount of spice and licorice woven through the black fruits and plum are doubly surprising, and appealing.
