The 2015 growing season in the Perth Hills region was early due to warm, dry conditions. This meant that there was minimal disease pressure, allowing optimum ripeness and flavour to develop.
The fruit was crushed into open fermenters where it was inoculated with yeast for fermentation. The fruit was hand plunged three times daily to ensure gentle tannin extraction of tannin. Once the fruit was pressed the wine was aged in oak barrels for 18 months before bottling.
