colour

Vibrant, bright crimson with purple hues.

aroma

This wine has incredible lift and perfectly framed notes of rose hip and blueberries. This is coupled with an alluring scent of star anise, forest floor and brambles.

palate

An elegant expression of a wine still definitively in the ‘Deep Woods Reserve’ house style.  A medium bodied wine that tastes of redcurrants and summer plums that has fine, elegant tannin and integrated oak.

cellaring

This wine may be enjoyed on release but will find further complexity over the next 5-10 years.

winemaker's note

"A very special wine, the previous three have won the Royal Melbourne Wine Show Cabernet Trophy three years running, culminating with the 2014 vintage winning the Jimmy Watson in 2016."

Julian Langworthy, Chief Winemaker

vintage

Representing the most important red wine made at Deep Woods Estate in any given vintage, the 2015 Reserve Cabernet Sauvignon is crafted from the very low-yielding original vines on the estate in the Yallingup region of Margaret River, along with fruit from a single grower also in the Yallingup Hills.

The 2015 harvest in Margaret River provided no shortage of challenges for the winemaking team up until picking.  Once inside the winery, the wines showed incredible (albeit unexpected) levels of vibrancy, elegance and almost ethereal qualities.

winemaking

Each parcel of fruit was afforded the utmost attention in the winery with winemaking techniques aimed at optimising and enhancing the individual character of each block. Throughout the fermentation each batch was pumped over twice daily to gently extract colour, flavour and tannin from the skins. Upon completion of fermentation, the wine was drained from its skins directly to a combination of new and seasoned French barriques where it was allowed to undergo malolactic fermentation and mature for 16 months.

A brilliant ruby colour, the wine's aromatics are redolent of mulberry and blackcurrent with a regional forest floor lift. The palate is of medium weight and crammed full of glorious red fruits, silky tannins and enough oak to give it structure. Superbly balanced and a delight.

From the oldest estate vines, plus grapes from a nearby grower, crushed and destemmed, 16 months maturation in new and used French barriques. A perfumed, brambly bouquet leads into a medium-bodied palate that caresses the mouth with blackcurrant, redcurrant and herbs. To 2030.
