The fruit was handpicked and whole bunch pressed at 5°C directly to 50% new and 50% seasoned French oak puncheons. With the addition of wild yeast, a natural fermentation was allowed to occur. This wine was then aged within those same puncheons on lees with monthly stirring before being blended and lightly fined and filtered prior to bottling in December 2019.
