The 2018 vintage in the Geographe region was mild and dry allowing for perfect ripeness of the fruit to develop, whilst retaining, natural acidity within the grape. The fruit for this wine was sourced from a single vineyard within the Geographe region, which is quickly becoming known for producing some excellent examples of this North-West Italian variety.
The fruit was hand-picked in the cool of the early morning for processing. Fruit was then destemmed, crushed and gently pressed to allow for extraction of clear, free run juice. This clean, clear juice was racked from the solids and fermented with a specifically chosen yeast strain at cool temperatures to retain the subtle aromatics of this wine. Lightly fined and filtered for clarity before being bottled in June 2018.
Steamed clams, lemongrass, and chilli.
There’s an interesting combination here, between dried peaches and apricots and some petrol. Bone-dry and peppery on the palate, which is medium-bodied with an oily sensation on the finish.
A variety ideally suited to Australia's fresh cuisines. Floral aromas with a trace of citrus. The palate is light-bodied with a spicy pear character and a crisp, fine, lingering acidity. Stacks up nicely as a current-drinking wine.
