2018 was a truly idyllic vintage in Margaret River. The growing season was moderate an steady, without any of the heat spikes seen in previous years. The conditions were perfect for aromatic white grape varieties such as Verdelho, which showed excellent purity of fruit and natural acidity.
Selected parcels of fruit were allowed to ripen to on the vine for an extended period before harvest. The resultant wine displays a higher level of residual sugar and lower than normal levels of alcohol. The wine was fermented at cold temperatures utilising aromatic yeast to maximise expression of the fruit. Fermentation was arrested early to retain natural grape sugars and to prevent excessive alcohol production. The resultant wine was stabilised early and committed to bottle to capture maximum freshness.
