Ebony is a classic Australian blend of Cabernet Sauvignon and Shiraz produced from both select growers and Deep Woods Estate-grown fruit. 2018 was a vintage of two distinct halves. A mild spring that initially caused some worry for varieties such as Cabernet Sauvignon and Shiraz was offset by a beautifully warm, early Autumn. Despite harvest being some three weeks later than a typical Margaret River season, fruit quality was incredible and the resultant wines are elegant, full of flavour and have lower than average alcohol levels.
The two varieties were handled separately throughout the winery with a range of winemaking techniques such as open-top fermentation, pre-soaking and post-fermentation maceration used. The philosophy behind Ebony is simple; fruit richness, flavour and soft approachable tannin.

Another wine that always shines in this category. Hardly surprising that such a great vintage should drip feed down into the value wines like this, resulting in a terrific wine that retains the consistency of recent years. It really is the perfect example of a sub-$15 wine. Easy current drinking with good depth and flavour. 91/100

Good colour with a somewhat subdued bouquet that has briary, dried herb, subtle dark-berry whiffs, the palate sinewy and firm, with a solid cabernet backbone and lasting after-grip. Subtle traces of leaf and mint. Good concentration and solidly built so it would reward another year or two in the cellar. The value for money is scarcely believable.
