The 2017 vintage certainly provided some challenges to the viticultural team. An atypically cold and wet February meant that careful canopy and crop management were required to ensure perfectly healthy fruit at harvest.
The grapes were hand-picked then left overnight in a cool room set to zero degrees. The following day, the fruit was whole bunch pressed, with minimal spins, on a long cycle, to avoid unwanted, ‘tougher’ phenolics. The juice was then moved straight to oak for wild ferment in both puncheons and hogsheads, 35% of which were new. The wine did not undergo any malolactic fermentation. Battonage was used sparingly and frequency was dependent on the individual parcel of wine.
Light yellow colour; it's a reserved colour, and the bouquet is likewise with savoury straw, nut and toast aromas that are youthfully under-developed. The palate is likewise taut and refined, elegant and understated but at the same time, intense and long. Lemon and grapefruit flavours linger a long time.
