The summer of 2017 was atypically cool which ensured that both Cabernet Sauvignon and Malbec ripened slowly and picking choices weren’t rushed. A dry April ensured maximum flavour and tannin ripeness were achieved in both varieties. The parcels of Cabernet Sauvignon chosen for this wine were elegant and generous of flavour, gently structured, had fine great balance, length and fine tannin. Malbec from the 2017 vintage showed great perfume and savoury complexity and was an integral part of the final blend.
The Cabernet Sauvignon was fermented solely in static fermenters. Pump-overs and delestage were used to extract fine tannin and colour. The Malbec was destemmed and transferred to an open fermenter where pump-overs and hand plunging were used. Primary fermentation occurred solely in tank before being racked to 30% new oak French barriques for malolactic fermentation. The juice was pressed to older hogsheads and barriques before barrel ageing for 18-20 months.
An impressive wine all round. All the major attributes are turned up in volume as well as in contrast. Vibrant dark colour, ripe black fruits, plums, cedar, bay leaf, fine chalky tannins plus length. But the most important attribute is the key to all fine wine: balance. Everything is in balance, despite the high volume. Super wine.98
Ah, I do love the influence of malbec in the cabernet blends. This is a cracking new wine that has both power and elegance. Typical black fruits with a dry tannin influence. Sustained finish. Firmish but still with elegance and charm. 94 points94
