Beautifully ripe and superfine tannins are the hallmark of this wine. Flavours of blood plums, mulberry and cassis, are intense and result in an effortlessly long and rewarding mouth-watering experience. Medium-bodied intensity is a thing of great charm and one of our regions and this wines great strengths.
This complex, detailed wine will reward careful cellaring for ten or more years.
The 2017 growing season was by most measures, an excellent vintage. A long, cool-season yielded wines with intense flavour yet medium-bodied structure and moderate alcohol levels. The vintage was, however, punctuated by an unseasonably wet and cold February. Careful management by our viticultural team was key to maximising fruit quality, along with the perfect warm and dry months of March and April.
Representing the pinnacle of Deep Woods’ house-style, this Cabernet Sauvignon was crafted from the ultra-low yielding, original vines on the estate coupled with fruit from another mature vinyeard, also in the Yallingup Hills in Margaret River.
Throughout fermentation each batch was pumped over between four to two times daily depending on the stage of fermnetation to gently extract colour, flavour and tannin. The wine was gently passed directly to a combination of new and seasoned French barriques where it matured in oak for approximately 18 months.
