Early January brought exceptional growing conditions, with a small amount of rain which lead to enhanced vine health. This allowed for perfect flavour ripeness and moderate sugar levels to be achieved.
The fruit was handpicked and whole bunch pressed at 5°C directly to new and seasoned French oak puncheons. With the addition of wild yeast, a natural fermentation was allowed to occur. This wine was then aged within those same puncheons for a four-month period on lees before being blended and lightly fined and filtered prior to bottling in August 2018.
