The Deep Woods Estate ‘Grand Selection’ Yallingup and Wilyabrup wines have been produced to highlight the distinct style of two of Margaret River’s best sub- regions.
The 2014 harvest in Margaret River was from our perspective a perfect Cabernet season. Relatively mild daytime temperatures and cool nights prevailed throughout late February and this allowed premium fruit parcels to be picked in perfect condition in early April once peak tannin and flavor ripeness was achieved.
The fruit for the Grand Selection Yallingup Cabernet was sourced from a single vineyard from the original Abbey Vale vineyard planted in 1983. This wine showcases the hallmarks of a true Yallingup Cabernet Sauvignon with incredible power and generosity of flavour yet fine effortlessly silky tannins. The wine was aged for 18 months in a combination of new and seasoned French oak barrels. This resultant wine is a selection of the very best five barrels from within this barrel group. 60% new, tight-grain French oak and 40% seasoned oak showcase a wine of classic regional expression and poise.
Made from 31yo vines, this is a selection of the five best barriques (three new) from the larger make of Reserve Cabernet. The colour is still a bright crimson-purple hue, the bouquet complex, the palate shocking in the quite extraordinary power and complexity of its blackcurrant, bramble and glittering tannins. Serious wine. Tasted among an all-star cast of Australian wine and this was possibly my favourite wine of the night. Quality is pretty extreme here. It’s more or less a barrel selection of a barrel selection. Super gravelly. Super fragrant. Wave after wave of herbs and berries, peppercorns and toasty oak. The tannin growls and rumbles like an old school V8 on the cruise, all the polish and the pomp. Depth, power, fragrance, scaffolding and the most incredible length. Balltearer of a wine.
